Use simple ingredients to maximum effect in this speedy side dish.
4 carrots, peeled, thinly sliced
1 bunch radishes, washed, dried, stems and roots trimmed, thinly sliced
1 red onion, halved, finely chopped
2 teaspoons cumin seeds
60ml (1/4 cup) fresh lemon juice
60ml (1/4 cup) fresh lime juice
1 tablespoon honey
1/4 teaspoon ground cinnamon
Salt & freshly ground black pepper
1 bunch fresh continental parsley, leaves picked
Step 1 Combine the carrot, radish and onion in a large bowl.
Step 2 Heat a small frying pan over medium heat. Add the cumin seeds and cook, stirring, for 1 minute or until aromatic.
Step 3 Whisk together the lemon juice, lime juice, honey, cinnamon and cumin seeds in a bowl. Taste and season with salt and pepper. Drizzle the salad with dressing and sprinkle with parsley. Gently toss to combine. Serve immediately.
